Every burrito I make feels like a guessing game with ratios. Sometimes I end up with too much rice and the protein is lost. Sometimes the beans overwhelm everything else. I am looking for a baseline ratio to start from that I can then adjust by preference. Is there an agreed-upon starting point, or does it completely depend on the style you are going for?
I keep getting blowouts and I suspect I am overfilling but I do not have a good reference point. Most recipes just say things like 'a cup of beans and some rice' which is not useful for understanding the actual weight. Is there a generally accepted fill weight range for a standard 12-inch flour tortilla? And does the weight limit change with tortilla brand or thickness?
I have heard different things about this. Some people say cold filling causes the tortilla to crack or stiffen before you finish the fold. Others say it does not matter as long as the tortilla is warm. I have had mixed results and cannot tell if temperature is the actual variable or if I am just inconsistent in my technique. Does anyone have a clear position on this? Is there an optimal fill temperature and does it vary by filling type?
Feeding eight people next weekend and I have got the burritos handled. Everything I think of for the table is either chips with something, or a salad that nobody will eat. What actually gets finished at your table?
Every cashew based one I have made is fine cold and breaks the moment it meets anything hot. Ends up grainy and separated and looking like a mistake. Has anyone got one that survives contact with a warm filling?
Every recipe I generate for breakfast includes them and every time I make it I regret it. Soggy layer in the middle, no texture left, no reason to be there. Is there a version of this that works or is it just a thing that looks good in photographs?
I have been putting things in more or less at random and it mostly works, but I keep seeing people talk about layering like it is a real thing. Is there an actual order, or is this one of those things people say because their grandmother did it?
