Question

What makes a vegan burrito feel satisfying rather than just filling?

I have been making vegan burritos for a few months and they are technically complete — beans, rice, vegetables, good salsa — but they do not feel satisfying in the same way as a burrito with meat and dairy. I can eat one and feel full but not satisfied. What is the element that makes the difference between a vegan burrito that is technically good and one that actually feels like a complete meal?

The bean broth is also key. If you are using drained canned beans or beans that were cooked in plain water, you are missing the starchy, deeply seasoned liquid that does half the flavor work in a good burrito. The broth in the beans is where the satisfaction lives.
