Question

Is there a good cheese substitute for a vegan burrito that actually melts?

I have tried nutritional yeast, a cashew-based cheese spread, and two commercial vegan cheese brands. The nutritional yeast does not melt. The cashew cheese spread works as a cold layer but does not melt in a hot burrito. The commercial cheeses melted somewhat but had an off flavor that was detectable. Is there a vegan option that actually melts properly in a hot burrito?

Violife or Miyoko's block mozzarella — shredded, not sliced — added directly on top of hot filling so it starts melting from contact heat before the final fold, then sealed in immediately. The residual heat inside the burrito finishes the melt during the rest period. The shredded form melts more reliably than slices because of the increased surface area.

For the cotija or queso fresco role — which is a finishing element rather than a melt element — cashew-based queso fresco actually works well. It crumbles, it has a mild tanginess, and it does not need to melt. Separating the melt function from the fresh cheese function and using different products for each is the solution.
