Question

How do I make the rice in a vegan burrito not taste like an afterthought?

The rice in my vegan burritos is always the weakest component. The beans have depth from their broth, the vegetables have char and caramelization, the salsa has acidity and heat. The rice is just... bland. It dilutes everything rather than contributing. Is there a way to make the rice an actual flavor contributor rather than just a neutral filler?

Three things: toast the rice dry in a pan until it smells nutty and takes on a little color before you add any liquid. Cook it in vegetable stock, not water — even a simple stock from onion, garlic, and dried chiles makes a significant difference. Finish with lime zest, not juice. The zest gives you citrus flavor without the acid, and acid in rice makes it gummy.

Or switch to brown rice, which has significantly more flavor than white and holds its texture better under the other components. The nuttiness of cooked brown rice does what you are trying to achieve with stock and toasting in one ingredient swap.
