Question

Should salsa go into the burrito warm or cold?

I have been to places that put cold salsa straight from the fridge into a burrito and others where the salsa is clearly warm. I have also noticed that my own burritos seem to taste different depending on the salsa temperature, but I cannot tell if that is the temperature itself or just what that particular salsa tasted like. Does salsa temperature inside a burrito actually matter?

Warm salsa makes the interior temperature of the burrito more consistent and prevents the tortilla from cooling unevenly before you eat. Cold salsa in the center of the burrito creates a cold pocket that affects the texture of everything around it. For dry-style burritos the warm salsa rule is important. For very wet styles where the salsa is more of a sauce element, cold is acceptable.

Temperature also affects how you perceive the acid. Cold salsa tastes sharper and more acidic. Warm salsa has the same acidity but the acid compounds are more volatile and you perceive them differently. A salsa that is well-balanced warm can taste too sharp when cold.
