Question

Can I use canned tomatoes for a cooked salsa?

It is off-season and fresh tomatoes where I live are genuinely bad right now — pale, mealy, no flavor. I want to make a cooked red salsa but I do not want to use bad fresh tomatoes just to feel authentic about it. Is canned an acceptable substitute and if so which type works best?

Yes — canned fire-roasted tomatoes are actually better than bad fresh ones for a cooked salsa. The canning process concentrates the tomato flavor and the fire-roasting gives you the char you would normally develop on the comal. Drain about half the liquid before using to account for the higher water content, and add a bit more dried chile to compensate for the reduced brightness of canned versus fresh.

San Marzano canned are the reliable choice. Low water content, concentrated flavor, consistent quality. Whole canned and then crushed by hand give you better texture than pre-diced.
