Question

What is epazote and do I actually need it?

I keep seeing epazote listed in bean recipes and I cannot find it locally. Some recipes say it is essential and others do not mention it at all. What does it actually contribute and is there a substitute?

Epazote also has traditional folkloric uses as a digestive aid — specifically, it is said to reduce the gas-producing effects of beans. Whether or not that is true, it is always added to black beans in central Mexican cooking and the two flavours are associated with each other in a way that feels correct.
