Question

What are the main differences between Mexican cooking from different regions that affect ingredients I should stock?

I cook general 'Mexican food' and have been for two years. I want to be more specific and regional but I don't know what the pantry differences are. If I wanted to cook Oaxacan vs Yucatecan vs northern Mexican food at home, what different ingredients would I need?

I would suggest picking one regional tradition and going deep before adding a second. Trying to learn all three at once means your pantry is incomplete for all of them. Pick the one that appeals most to you and spend six months learning it. Then the second tradition's differences will make more sense because you have a reference point.
