Question

What is the standard masa harina to water ratio for tamale masa?

Every recipe I find uses different ratios and the resulting masa texture varies wildly. Is there a standard starting ratio for tamale masa from masa harina, or does it vary too much by brand to have a single answer?

Starting point for tamale masa: 2 cups masa harina to 1.5 cups warm broth or water. That ratio produces a workable base which you then adjust to the correct texture (soft peanut butter, passes the float test). Different brands of masa harina do absorb differently — Maseca absorbs more liquid than some others. Use the texture as your guide, not the measurement. The float test is the reliable calibration point, not the recipe.

The fat ratio is as important as the water ratio and both interact. Standard for tamales: 1/2 cup lard (or shortening) per 2 cups masa harina, beaten to light and fluffy before the masa is added. Reduce fat and you need more liquid to compensate for texture. Increase fat and the masa gets wet faster than expected.
