Question

How do I prevent tamale filling from being in one place in the tamale?

When I cut open my tamales the filling is always off-centre or clumped in one spot. I want the filling distributed through the cross-section so each bite has masa and filling together. Am I placing it wrong or is this a masa thickness issue?

The border measurement helped me enormously. I used to spread masa to the edges and then fold, which meant the masa at the fold point was too thin and tore, which meant the filling migrated. Leaving the 1-inch border gives you enough masa at the fold to seal properly.
