Question

Can I make masa harina at home from dried corn?

I know nixtamalisation produces fresh masa but I'm wondering whether I can then dry and grind that masa to produce a masa harina-equivalent that I could store. Is the process practical, does it work, and what equipment is needed?

Yes, it is possible and the result is better than commercial masa harina because you control the corn variety and the nixtamalisation time. Process: nixtamalise as normal, rinse thoroughly, then dry the nixtamal completely (a dehydrator at low temperature for 24 hours works well; a warm oven with the door ajar for 12 hours also works). Once bone dry, grind in a grain mill. The result keeps for several months in a sealed container. The equipment requirement — a grain mill — is the main barrier.

The dehydration is the step where most people fail — the nixtamal needs to be completely dry before grinding or the resulting powder will clump. A moisture content above about 8% will produce a masa harina that does not store well. The dehydrator is the reliable method; oven-drying requires careful monitoring.
