Question

What is the correct water-to-rice ratio for Mexican red rice?

I keep getting either underdone or gummy Mexican red rice and I cannot identify which variable to fix. I have tried 1:1.5, 1:2, and 1:1.75 ratios and none of them are consistently right. Is there a standard ratio or is the liquid ratio not the main variable I should be adjusting?

Another variable: altitude. If you are cooking above 1000m the boiling point is lower and rice takes longer to cook and absorbs differently. Most standard ratios are calibrated for sea level. At altitude: increase the liquid by about 15% and extend the cook time slightly.
