Tortilla selection at scale — what I learned running a food stall

After testing eight different tortilla suppliers for a three-day festival I have real data. The criteria that matter at volume: tear resistance under steam, flexibility after resting on a warm surface for three minutes, and seal integrity at 250g fill weight. Three of the eight failed at the steam test — they got sticky and tore when stacked. Two more failed the seal test at 250g. The remaining three were comparable in performance. The price difference between them was 40%. My takeaway: the cheapest option that passes all three tests is the right choice. Above that threshold additional cost does not improve results.

What warming method are you using at the stall? I have been going back and forth between a steam cabinet and a dry comal surface, and they produce different results in terms of how pliable the tortilla is at the fold point.

None of those eight beat a made-from-scratch lard tortilla. I understand you are running a stall and cannot make fresh at service but I want to put that on record. The best commercial tortilla is still a distant second.
