The order of fillings and why it matters

I spent a month experimenting with filling order and the results were clear enough to share. Rice goes down first as a flat, absorbent base. It soaks up any moisture that drips from the protein and creates a stable platform. Protein goes in the center on top of the rice. Wet ingredients — salsa, crema, pickled things — go in a controlled strip down the middle of the protein, not scattered. Avocado and cheese go last, right on top. The reason the order matters: each bite should have all components. If the wet ingredients are placed poorly, they migrate to one end. If the avocado is placed too early, it gets compressed under the protein and loses texture.

The wet ingredient placement is the real insight here. Putting salsa in a controlled strip rather than spreading it everywhere is what I had been missing. When it is spread out it migrates during the fold and you get a soggy end.

Most people in my experience just dump everything in and then wonder why the cross section is random. The filling order is the thing no recipe explains because it looks obvious in a video but the reasoning behind it is not given.
