The case for letting the burrito rest before cutting

This one changed my results more than almost anything else: after sealing a burrito, let it rest for three to five minutes before cutting. I had always cut immediately and then wondered why the first cut was always the worst — fillings gushing out, the cross section a mess. What the rest period does is allow the fillings to redistribute into the new shape and the tortilla to set around them. The interior temperature also equalizes. When you cut after resting the result holds together completely differently. Try it once and you will not go back.

This is the single improvement that made the biggest difference for me. More than technique, more than fill weight, more than tortilla brand. Resting is free and most people skip it because they are hungry. The discipline to wait three minutes is the whole lesson.

Does resting seam-side down also help the seal set? I have been doing it seam-side up out of habit and wondering if flipping it during the rest would give a better seal.
