Question

How do I keep the burrito from unrolling when I put it on the skillet?

My seal holds when I am holding it in my hands but as soon as I set it down on the skillet it starts to unroll. I have tried rolling it tighter but then I get blowouts at the ends. There seems to be a tension between rolling tight enough to hold and not so tight that it fails. Is there a technique for transferring the sealed burrito to the skillet without it unrolling?

Place it seam-side down on a hot skillet. The heat seals the final seam in about thirty seconds. The key is that the skillet needs to be properly hot before the burrito touches it — if it is too cool, the tortilla steams rather than seals, and you get the unrolling you described. Hot skillet, seam down, thirty seconds, do not move it.

Medium-high heat is the target. You should hear a sizzle immediately when it touches the surface. If there is no sound, the pan is not hot enough and you will get steam instead of seal.
