The case for the breakfast burrito as a serious dish

Breakfast burritos get treated as fast food convenience items and I think that framing has kept most home cooks from making them well. A properly made breakfast burrito is genuinely as good as any dinner burrito — it just requires the same attention. The egg scramble technique matters as much as any protein technique. The potato texture matters. The salsa needs to be fresh and the right balance of acid and heat for morning rather than evening. When I started applying the same standards to breakfast as I do to dinner, the results improved immediately. The mistake is treating it as a lesser format just because the ingredients are simpler.

A scrambled egg burrito made with the right technique is as good as anything else in this category. The problem is that scrambled eggs are deceptively hard to do well at burrito scale — you need them firm enough to hold their position but not rubbery.

The egg scramble temperature is what most people get wrong. They cook on too high heat, get the eggs done in 90 seconds, and then they sit and continue cooking in the residual heat of the pan. Low heat and intentional undercooking is the whole technique.
