Question

Should potato go under or over the eggs in a breakfast burrito?

I have been putting potato below eggs and eggs below cheese, but I have seen plenty of builds where it is reversed. Is there a reason to prefer one order over the other, or is it just personal preference?

Potatoes under, eggs above. Potatoes are the structural base — they are denser and provide a stable platform. Eggs need to sit where they are not compressed by heavier items, otherwise they lose texture. Cheese goes last, on the eggs, where it can melt from the egg heat during the rest period.

One exception: if your potatoes are very crispy, keep them separate from the eggs until just before the final fold. Crispy potatoes placed under wet eggs will soften quickly from the moisture. Better to add them as a layer on top of the eggs where they stay dry.
