Question

Does rice belong in a breakfast burrito?

I have been going back and forth on this. Some places I have been use rice in their breakfast burritos, others skip it entirely and use only potato as the starch. I genuinely cannot tell if it is a regional thing, a style choice, or if one is objectively better for the format. Does rice in a breakfast burrito make sense or is potato the correct starch for morning?

No hard rule, but the traditional answer is potato. Potato in a breakfast burrito serves both a starch function and a textural function that rice cannot — the crispy exterior and soft interior gives you a contrast that rice does not have. Rice is valid if you want something lighter, but it is less traditional and in my experience the texture gets lost against the eggs.

If you use rice in a breakfast burrito, use half as much as you would in a dinner burrito and use it only as a thin base layer. The potato is doing the primary starch work; the rice is seasoning. Using a full portion of rice makes the breakfast burrito feel heavy in a way that does not work for morning.
